Course Description

BSN 311 Nutrition and Diet Therapy examines the fundamentals of nutrition related to promoting and maintaining optimal health. In this course, students learn the practical applications and treatment of pathologies with nutritional components. In particular, students learn about nutrients and other substances and their action, interaction, and balance relative to health and disease, as well as the processes by which the human body ingests, digests, absorbs, transports, utilizes, and excretes food substances. This course also highlights diet therapies to treat diseases, providing students with competencies in appropriate meal planning and education for a given patient. 

Learning Outcomes:

  • Understand the role of nutrients in the human body.
  • Learn and discuss the scientific basis of family and community nutrition and diet therapy.
  • Understand the pathologies caused by or causing nutritional impairments and their treatment, including through diet therapy.
  • Critically appraise scientific information to understand nutritional issues reported in the mass media.
